Bacon-Wrapped Avocado Fries with Nori Mayonnaise
INGREDIENTS
  • 2 large avocados peeled and halved 4 slice bacon (or you can use pancetta) cut into 16 thin strips
  • ½ lemons cut into wedges
  • 2 pinch shichimi tagarashi optional (see note)Nori Mayonnaise
  • 1 nori sheets finely chopped
  • 80 g mayonnaise
  • 1 pinch sea salt Himalayan salt
  • 1 pinch freshly ground black pepper
METHOD
  • Slice the avocado into 1 cm pieces lengthways and set aside.
  • Preheat the oven to 200°C.
  • Line a tray with baking paper and lay the bacon pieces flat onto the tray. Cook the bacon in the oven for 2 minute to soften the bacon strips.
  • When cool enough to handle, carefully wrap one strip of bacon around one piece of avocado starting at one end of the avocado and wrapping to the opposite end. Tuck the end piece of bacon underneath the avocado so that it’s well secured. Continue with the remaining pieces of bacon and avocado.
  • Place the bacon-wrapped avocado pieces onto the same lined baking tray used for the bacon. Bake in the oven for 8 – 12 minutes, or until the bacon is lightly golden and crispy.
  • Mix the nori and mayonnaise in a bowl. Season with a touch of salt and freshly black pepper, if needed.
  • Arrange the avocado fries onto a platter, squeeze some lemon juice over the fries, then sprinkle some shichimi tagorashi (if using).
  • Spoon the nori mayonnaise into a ramekin and serve on the side for dipping.

NOTE: Shichimi Tagaragrshi is Japanese chilli pepper spice blend and can befound in Asian grocers.
