Best Bolognaise Sauce

Best Bolognaise Sauce – I was lucky enough to be shown this traditional family recipe by a friend. I then came up with this yummy, slow-cooked superfood version.

This is the perfect meal for little fusspots. It’s a wonderful way to pack in loads of nutrition with every mouthful. Use any vegetables you can find in the fridge. Blend them up so even the pickiest detective can’t see them.

INGREDIENTS
  • 3 tablespoons coconut oil duck fat, tallow or other good quality fat
  • 2 onions chopped
  • 3 garlic cloves finely chopped
  • 1 tablespoons smoked paprika heaped sized
  • 4 celery stalks finely chopped
  • 2 carrots finely chopped
  • 1 kg beef mince grass-fed
  • 1/4 head cauliflower (about 200g/4 1/2 oz), finely chopped
  • 1/4 head broccoli (about 120g/4 1/2 oz), finely chopped
  • 1 zucchini finely chopped
  • 2 kale cups (100g/3 1/2 oz) finely chopped
  • 4 tomatoes chopped
  • 2 tablespoons basil chopped
  • 1 tablespoon dried oregano
  • 250 mls beef broth (stock) plus extra if needed
  • 700 mls tomato passata plus extra if neededTO SERVE

  • parsley
METHOD
  • Place the coconut oil in a large pot over medium–high heat. Add the onion and sauté until soft and translucent (about 5 minutes). Add the garlic and paprika and cook until fragrant (about 30 seconds), stirring constantly. Next, add the celery and carrot and cook for a further 5 minutes or until slightly browned and softened.
  • Add the mince and brown for 5–6 minutes, breaking up the meat with a wooden spoon. Add the cauliflower, broccoli, zucchini, kale, tomatoes, basil, oregano, broth and passata, and stir to combine. Cover, reduce heat and gently simmer, stirring occasionally, for 3 hours until all the vegetables are soft and tender (you can also use a slow-cooker). Check occasionally to make sure it doesn’t need any extra broth or passata.
  • Before serving, stir in a tablespoon of dulse flakes. Divide between bowls and top each with fresh basil and parsley leaves.
