My favourite meal this month

It’s absolutely no secret that I love cooking using my Thermomix.

As a Thermomix consultant,  I know that I will never be short of a recipe with the online platform “Cookidoo” and the ‘Salmon Nicoise Salad’ (pronounced “nee – swaz”) is rapidly becoming one of my all time favourites.  

This salad is named after and originated in the French city of Nice.  It is traditionally made of tomatoes, hard boiled eggs, nicoise olives and anchovies or tuna dressed with olive oil.

There are so many reasons why I love this recipe – it’s healthy and delicious, using steaming to cook both my protein and vegetables.  It’s a wonderful lunch or dinner option and so easy to make taking approximately 10 minutes preparation time and 30 minutes to get on the table.  

The Thermomix allows for the layering of foods so that all components can be cooked at the same time i.e. salmon, eggs, beans and potatoes as opposed to using separate cooking appliances or pots.  Needless to say, whether you have a Thermomix or not, once the layered food is cooked to your liking, all that is left  is a bit of chopping. Then you simply assemble the remaining ingredients onto a platter and top with a light dressing of lemon juice, olive oil, anchovy fillets and spring onion.  It makes a considerable amount for a family meal and enough for leftovers or it’s also a great one to take to a family function.

This recipe can also be tweaked for your own preferred protein or vegetable choices, for example, I have on occasions substituted salmon with chicken or used sweet potato rather than small baby potatoes. I have also added a teaspoon of mayonnaise into the dressing to make it creamier and luscious.
