Roasted broccoli and bacon

This recipe has been inspired by Michelle Tam from Nom Nom Paleo. Broccoli is a total superstar in this recipe… is it the broccoli or is it the bacon? What does it really matter – it has never tasted so good and the kids love it this way!

Serve with some fermented veg and a piece of grilled or steamed fish, or even some oven roasted chicken. You could also swap the broccoli for cauliflower, brussels sprouts, zucchini, mushrooms or parsnips.

INGREDIENTS
  • 2 heads broccoli broken into florets
  • 5 garlic cloves roughly chopped
  • 4 slices bacon cut into bite-size pieces
  • 2 tablespoons coconut oil duck fat, tallow or other good quality fat or other good quality fat
  • lemon juice or raw apple cider
  • vinegar, to serve (optional)
METHOD
  • Preheat the oven to 200°C (400°F / Gas 6).
  • Place all ingredients except for the lemon juice in a large bowl and toss to combine. Season generously with sea salt and freshly cracked black pepper.
  • Transfer the vegetables and bacon to a roasting tray and spread out into a single layer – do not over lap the broccoli or it may not brown properly. Roast the broccoli and bacon in the oven for 30 – 35 minutes, rotating the tray and flipping the broccoli and bacon pieces every 10 minutes.
  • Squeeze a little lemon juice or a splash of apple cider vinegar over the roasted broccoli for an extra boost of flavour just before serving.
